I mix them usually. Depending on how much I have of each. I keep both. I always use Weyerman or Bestmalz. PH drops with all dark according to the calculator. I’ve never actually checked it though.

I haven't done a pH check in a few brews. Would you mind posting your recipe? Since I don't like coffee, I may sub out the carafa.
Caraffa special doesn’t taste like coffee. Use more dark Munich than light of you can. This was split 50/50
