I just grabbed a sixer of the same beer for the same reason!! Great beer for wings and nachos. :)
 
The first Saturday in February is National Pisco Sour Day (in Peru). What a great drink.

Fill the shaker with ice.
1.5 oz Pisco
1 oz Lemon Juice
3/4 oz Simple Syrup
1 Egg White

Shake like the dickens and strain.

Wayner's Pale Ale is rounding into form! Bit of haze to it, but reasonable clarity. Pretty impressive hop aroma, and flavor, and a bitterness that is not overpowering, and yet formidable. Very juicy flavor, and feel, but doesn't have the mouthfeel of a NEIPA. One to two more days for complete carbonation may add to the gambit of flavors in this one. My first thoughts are that I will definitely add this to my rotation of brews! Thank you Wayner!

I like that glass! Old school, maybe tropics style?

Third time is a charm on this 007 IPA. I used this recipe as a calibrator for a number of process changes to improve flavor, among other objectives. Outstanding!

Pisco Sour Day (in Peru)
Hey Meg, nice to see your post... I didn't know that there is a 'Day' for the Pisco Sour.
It is a tradition here in Chile as well as in Peru. The drinks are similar between the two countries, your recipe is closer to what we drink in Chile... the version from Peru is made with Key Limes instead of Lemons as well as they use a dash of 'Bitter' dropped into the foam. Both versions are delicious and always available at family and friends get togethers.
Both countries have a 'gentlemens' feud over where the Pisco Sour originated.... I've enjoyed both and actually like the Peruvian version better, although both are very tasty.
 
Looks good. one I brew a while back. Didn’t have the darker crystal and I used roasted barley. I need to try yours soon. Carafa good sub for black prinz?

Have to think Carafa II would work, preferably dehusked.
