4th July a day late..bbq chicken, black bean and corn salsa, grilled fresh pineapple and the first local corn of the season

That's a Serria Nevada pale with some of the pineapple juice mixed in ...ummm juicey!
 
I grilled some pineapple yesterday to add to "Hawaiin" sausage on a bunch!
Was that sausage on a pizza? I always thought that Hawaiian pizza was a Hawaiian or a Californian thing thing....who knew!
 
Sausage on a bun, not a bunch, a variation on a Hawaiian hot dog I have had, and done before

Nothing fancy, frozen burgers from Aldi (although their black Angus bacon cheddar are really good) but first running off my new infrared (electric) grill. Tasted great, wouldn't know the difference between propane. Don't really have to worry about flare ups. I was a bit concerned because after preheating the grill and adding food the temp gauge never really went above 250F again but I guess the burgers absorbed all the heat from the element cause they got fully done in about the normal time. Can't wait to try it out with more stuff!
 
I still had a very old pack of seasoning for chinese red pork.
Did 2 pork chops on the wsm. Ate one and will eat the other one today.
Maybe with Chinese buns if I feel like making them :)
 
I southernified it a little, so I guess I have redneck Mofongo.

I have been giving Josh a hard time because he hasn't seen it up his way, and Publix had it the day he left here.
Last week, I had to go to Total Wine to find it, but this week, Publix had it again.
I think they did a great job with the collab this year. It definitely isn't a Marzen, but it is a tasty 30IBU Festbier.
Since my wife passed away, I have been trying to find easy things that I like to cook. I never realized that Mofongo isn't that difficult, and there are not that many Puerto Rican restaurants. I had to substitute the pork rinds with bacon, and I have my 4 veggies that I sauté on almost everything: onion, pepper, mushrooms, and tomatoes. (Louisiana has a trinity. I have a quad:)), but I did use a regular Sofrito too.
Also did a version of her healthy Sloppy Joe recipe last night and made it a little less healthy by making it into a Pot Pie and melting sharp cheddar cheese on top of it.
