I used liquid Wyeast 1332 Northwest Ale, a first for me. Wyeast is the one that has the internal smack pack of nutrients that needs to be broken to get the yeast jump started. It was pretty cool watching the pouch swell to the point that it looked like it would pop. The yeast has completed the bulk of its work, now I’m just giving it time to clean up according to my usual 3 week fermentation schedule.Whatcha gonna use for yeast in the wheat?

US-05 is quite fast. I’ve repitched it a few times and had krausen climb through 10” of headspace to get in the airlock. I like S-33, too, but it’s not as quick to drop out after it’s done. Edit - Oops, after checking my notes, I realize that I used US-05 on the Wheat Ale. The Wyeast 1332 was actually used on Smooth Stout, brewed the week prior to the Wheat Ale.

Having a Tractor Smash (or 2) while I stop for dinner. All old cabinets except the sink base are now removed or loose, and sheet rock work is about 90% complete. Gonna pull the sink base tomorrow and make a few small plumbing repairs/upgrades and patch/seal the wall behind it, then temporarily put it back until we can install the new corner cabinet and new sink base. Cutting the old counter top so I can reuse it in my future brew shed. Might be putting cabinets in on Saturday. Gonna be a very different kitchen when done.
Enough to explode a bag in my 16 gallon shop vac so far. Fortunately I had a filter on it too and just lost suction and didn’t completely cover house. We’ve probably put 200 pounds of mud on the walls in this house this year, and seems like we sanded at least 150 of it back off. We renovated the hall and added an attic stair, combined a formal living room and dining room into what I call the mess hall, and now the kitchen. Almost done with the mud work. Should be tomorrow night, depending on what it takes behind the sink base. Doing walls ain’t so bad, but inverted work on ceilings is hell on the lower back. I probably replaced 30% of the sheet rock in the kitchen. Used up the majority of 3 sheets for patching and closing up the holes left by removing the useless soffit. That’s gonna add nearly 30 cubic feet of useful cabinet space.Aaah, sheetrock dust!
