What are you drinking right now?

View attachment 20946 Stout, for a somewhat dark mood. Yesterday our condominium homeowners association notified us that, due to wildfire risk, we’re being hit with a special assessment to cover an astronomical increase in our association’s fire insurance coverage. In 2021, the fire insurance for a 243 unit complex was about $47k. After the insurer refused to renew, the best the association could find was almost $700k per year. So our already high monthly dues of $330 get an additional bump of $450 per month ($780 monthly until December, at least). After 24+ mostly very good years here, my wife and I have decided it is time to leave our home state of California. Today we contacted a realtor to begin the process of selling our home. It is time to head north to Oregon. The good part of this is that we own our place outright, so it’s 100% equity that we take with us.
Sucks on the move but sounds like you got an area picked out! More hops up there anyway? :)

Holly Crap man!
I don't blame you!
yea insurance is going through the roof here in Aus too.
we've had some record floods here and people are pretty much walking away from their homes because these "1 in 100 year" floods are happening every other year.

Good luck with the move.
Thanks for that sentiment.
Climate change is real! You, we and everyone on this site around the world is experiencing climate change. Hope you can stay safe above the flood line Ben. Hope all of us can stay safe, and keep brewing.

The last bottle of my Belgian pale ale, such a tasty beer. After 2 weeks in the fridge, it still pours with chill haze, oh well. I will brew this again, next time using Irish moss just to see if I get clearer beer.

Frigging good head man how tight are them bubbles .
Geletin works pretty good on the haze too.
Cold crash in fermenter then add Geletin 1/2 teaspoon/ 1 cup boiling water disolve then tip this in. This will drop the haze then you can bottle your beer after that. Give it 2 days to work it's magic.
There's other finnings if your vegetarian too.
Worth a try
Your call.
I still think your beer looks great as is though.

Thanks Ben, for good advice and kind words.

I don't mind the haze at all, as long as it tastes good!
Good luck with selling and moving @Herm_brews
That's a heck of a lot of money for insurance...

Thanks Zambezi.
Likewise, I don’t mind the haze when the beer tastes good. My stout is the first beer that I used Irish moss, and it seems to be clear, just dark. My American wheat (also used Irish moss on that beer) is brilliant clear in the bottle, and I might open a bottle tomorrow to test that clarity. If it tastes good, it will be a success.

Good luck with the move Herm. Does this mean you will have to buy a jacket?! ;)

I'm sure you guys will end up in a great spot. Exciting new chapter.

And doing a test:
Next saison has been in the fridge shorter, but carbonated longer.
Checking if I can taste a difference.
And I can....
Longer in the fridge is nicer. Well longer: 1.5 vs 3 days ;)

Oh I have a few of those already. Let it be known, at one time I was an avid snow skier.
It will be quite a thing though to see that stuff that falls out of the sky. Rain, I think they call it.

If you end up in Eugene you'll be decently close to Willamette Pass ski resort. My family went there every weekend when I was growing up. Used to know that place backwards and forwards
