I brewed today!

Cafe au lait stout.

Basically a chocolate milk stout with coffee in it.

No booze, just add is.

What would the booze do?
Sanitize the ingredients. Glad to hear you haven't had any issues. Some people get real paranoid about fermenter additions and sanitation
 
Do you soak them in booze or toss them in as is?

I did a Peanut Butter Cup Stout and used vodka on the cocoa nibs to make a tincture to add to the secondary. I have read a few articles online about it and it worked out very well. Wasn't really thinking much about the sanitation side for the nibs. This was the 4th beer I have made using cocoa nibs and by far the best chocolate flavor. I used 8 oz of vodka and 4 oz of coca nibs. Basically I just sanitized a mason jar, added vodka and cocoa nibs, let it set for about four days (shaking it several times a day). Strained out the cocoa nibs and froze the remaining liquid. The next morning I skimmed the fatty oil off the top and added to secondary.

Sure not feeling it today, but brewing an ESB anyway. have to ship some off in two weeks for a comp.
-trying BIAB too. although one less vessel, came with its own problems but overall went well.

wort tasted delicious. I hope is stays that way . :D

*I kegged the stout, drained, and dumped this right on top of the s04 slurry. rolling already
