Home made pizza

Nice! So you must be near Bodensee. I've been to Friedrichshafen a few times for the Ham Radio treffe. It happens again in 4 weeks, but I'll not visit this year.

I live about 50 km or so from there, to the west. I live just south of the city of Basel, Switzerland. If you find the three way border or France, Germany and Switzerland, I live there. If I walk out of my back garden and through a small wood, I will cross the French border after about 300 meters or so of walking. That is cool as they have some great wine and cheese, but bad as my French is not very good.
 
Wifey's bestey stopped by with some local pizza dough that made tonight's dinner an easy call..fresh leftovers pizza..chicken stir fry and a few other goodies in the fridge.

I'll be making some pies tonight.
Still working on dialing in the new oven.
This dough is at 70% hydration
 
There's a couple from last night.
The first is a mini dill pickle with a light red sauce base, brick cheese and a ranch drizzle on the top.
The second one was the last of the evening, so it had a bit of everything on it
 
Did you use 100% semolina?
Isn't that gritty?
 
Is semola not semolina?
Coarse ground corn flour?

Semola is semolina, same base material. Semolina is coarser almost like meal, semola is really flour, very fine dust. Both make great bread, but 100% semolina makes a coarse (not gritty) loaf.
