-- Adapted from the LoCal IPA recipe provided by Genus Brewing.
- Use Granny Smith apples. Remove cores, puree to fine consistency and slowly add to mash. The added pectins will help increase haze without adding apple flavor
- Mash for 90 minutes
- Add amylase enzyme and monk fruit sugar blend to the fermenter before transferring wort from the kettle.
