For this edition of the brew I have changed the mash schedule to a step mash - adding a specific protein rest 50C, specific beta rest 63C, specific alpha rest 67C, and a specific glycoprotein rest 71C, before mash out at 76C. In an effort to have a drier beer and improved head retention rather than a single infusion mash at 67C.
Previous brews of this beer have been quite cloudy. developing chill haze on cooling but failing to clear on lagering. Other brews using similar ingredients but stepped mashed develop brilliant clarity on lagering. Will see what occurs.
