Equipo 2 ollas y bolsa: en una macerado, en otra lavado.
Tratamiento con sales al total del agua.
Tratamiento con ácido por separado al agua de macerado y lavado.
Maceración escalonada: beta 63º 20m, alfa 71º 50m, inactivación 77º 10m.
Agua total 13,58 L; Pérdida teórica: 2,8 L grano + 1,95 L hervor (18%) + 0,33 L torbellino = 8,5 L a fermentar (diferencia de 4lts!, eventualmente agregar agua durante hervor)
Starter: 700ml (final de hervor) + 75g DME + 5,5g lev seca + agitador (seguro para lev seca con rango teorico de entre 10-20 B de cel/g : 1,09 - 1,43 Mcel/ml/ºP).
