Notes

TANK 5 8/7

34 gypsum, 15 epsom, 50 CaCl, 95 acid

Mashed in and temp was a little high. 68°. But came down after 10 minutes to 67°. ph was low at first measure, 5.05 but second was 5.2 at 30 minutes. At 30 temp on top was low, 62.5°. Mixed and sped up the recirc flow. Then got to 63.6°. Giving it 10 minutes then will check again. Temp was about 64° and then got up to 65° or a little higher by the end of mash. I am going to call that good. Will proceed to mash out. 1.045 663L 5.34pH.

Final 1.048. pH 5.19. 624L prior to chilling and dumping trub.
