Curious...do you remember if the malt came through? I'm really trying to learn something about this Vienna Malt, as well as the hops.

Besides it being a touch on the sweet side, I don't remember anything distinctly "vienna" about it. But it was my first Vienna smash so I wasn't quite sure what to expect. This was a 2.5 gallon batch:

I have a kit - an extract kit, no shame in it - to do a Bell's Two-Hearted Homage, plus the grains, yeast and hops to do a Guinness Foreign Extra Stout. I figure I'll have some time over the Thanksgiving break to, maybe, get both done. No nitro setup for the Guinness and I'm not doing the "stale beer" procedure to get the "tang" but I think I can emulate it well enough with mash capping and adding some lactic acid at packaging.

Next up for me is a Bitter using Golden Promise and Yorkshire Yeast. I’ll grow in 5% dark crystal and 1% Roast. Fuggle and Golding to hop. May call it “This Bitter’s in Shambles” After the Shambles in York.

Add your dark malts when your about to mash out/ sparge.

Idea is more colour contribution than roast
 
Exactly. I use a long batch sparge (15 mins) to get both color and roastiness without harshness.
That's one thing I find mashing a dark beer not that I brew them alot but it takes awhile before the colour is fully extracted.

The Schwartz beer that I brewed recently I capped that mash with 220g of midnight wheat but I did that as I started to heat my sparge water so I'd imagine it was about 20mins before lifting the grain basket out.
 
first beer out with my foundry will be a common red ale, I don't expect anything great on the first batch, Ill have to get my settings tuned

While that looks great may I suggest taking part in the quarterly brew and have a crack at JAs Irish Red I'm sure you'll love his red not that your a will be lacking.:)
