What’s for dinner?

Tomorrow nights dinner for the family and a few very close friends. 19.50 lb beef Brisket with a special homemade rub. Injected with the rub. A little over 8 hours to soak up the Injection and on the Traeger in the morning. A cup of good coffee and a beautiful sunset will hopefully start the day. Stay tuned for the results late tomorrow afternoon.

I tried smoking a brisket once but couldn't keep it lit...:rolleyes:
 
This is an experiment forgot to put this on on the weekend sooo

Objective to have the roast cooked low ready to be finished in the oven this arvo in like 10hours time.
100c is the right temp?

Got stc running via PWM set at 80% power running

Slow cooker
Temp probe is at top of crock pot.
Got the carrots under the roast incase we get scorchy scorchy.
Hopefully when I get home from work today it'll be ready just to pop in the oven to get some caramelisation and to cook me spuds.

What do you rekon fail ?

To be totally wung, you'd need to do it with chicken wings...

A crock pot has its heating coils on the sides, not the bottom. The carrots aren't preventing any burning, but they will end up delicious.

Na it was a bit dry like too dry I think it needed less in the oven at the end the roast veg were good though.
The meat did fall apart but maybe next time I'll drop that 100c down a fair bit and I rekon pork will go better

No pic, but had an oyster pot pie, mix of 5 veggies perfectly half tender half crunch, and some Bleu cheese and apple coleslaw. And a bit of the wife's halibut with mushrooms and porcinni sauce. And some more Lot 3 as well as no less than 2 double Dewars on the rocks...today was a good day (full and happy belly emoji)

I fired up the Weber while Wifey sauted up the peppers from the garden...we were gonna make a baguette to put them on but didn't feel like eating at midnight. That's a feta, spinach and chicken on the right, a sweet Italian in the middle and straight chicken on the left. The dark mild didn't pair as well as the Munich Cluster smash I had while grilling....
