Lots of things you can add to that blank plate.A new soon to be fermenter. Unfortunately it was suppose to be 7.5 gallons but it ended up 6.28 gallons. I think it will work. It came with a blanking plate and a plate with a dip tube and pressure port. I got it off of market place. It came, unused, from a closed CBD facility.

I wouldn't tell anyone not to worry or check their pH. Obviously, it's important. But, after checking mine against the Brewer's Friend predicted value a few times and finding the two close enough for homebrewing purposes, I shelved my pH meter. I just find them to be a PITA. I use this one. the cap is air tight (has an oring) just put in a bit of storage solution and works like a charm.Same here I used one until the probe became inaccurate and I didn't bother getting a replacement probe.
Calibrating it wasn't so bad but stroring it in the storage solution in between brewing it'd be dry when I come back to brew in 2 weeks time.

I'm trying to not touch the vessel and just go through the cap. But......maybe add a weldless 1 1/2" TC bulkhead to the side near the bottom? then you can put a ball valve on it and easy drainage.

That's how I'd go about it on the blanking plate.

It came with the gas and liquid posts they sell it as the pressure lid.
Then I stuck them weldless bulkheads in for the temp probe and glycol coil.
Holds Pressure every time no issues since I made it.
