What are you drinking right now?

But honestly I don't know how anyone gets away with no temp control especially in the warmer climes. When I'm dying for a lager it's usually too hot to brew a lager you gotta have temp control then.
Since 99% of all beers I drink are ales, I don’t need lagering ability, and I get by just fine without temperature control. It is easier here in PNW than it was in SoCal, but there are still challenges. Cheers!

See @ Don there is one more alternative if your temps are getting to high ferment it under a bit of pressure. That might rattle the Engineer in you though a Lot of "IFs" in that.

I get it. I might need more Hefeweitzen before I get round to another lager though. I mean, sure, I could brew one as soon as the ferm fridge is done with the brown, but a nice maertzen should be made in...March. Just in time for oktoberfest.

Meanwhile, it has been brought to my attention that one can now purchase various beers, even from other towns, in bottles and cans. Wow! :cool:

That too. I drink mostly ales, and so brew them mostly.

You can if you have to
By brewing ales and carefully selecting yeasts and buying lager ;)
I did for close to 2 years
But... I admit, it is much easier with climate control
 
That looks great Ben, I'd love to play around with that and see how it actually tastes at some point.

It alright not one of my better ones this one's not as crisp as one's I've done earlier this year. Head isn't as good either.
I've been experimenting with kilning a little hotter and maybe I've found a point where I get diminishing returns if I go hotter for longer as I get a sorta grainy taste that takes awhile to lager out.

I would like to try 34/70 next I've been brewing this with Nova Lager all year so I might splurge and buy some more yeast to play with soon:)

Test bottle of my Best Bitter just two weeks after sticking straight in the fridge following conditioning.

Hop complexity has already worked nicely. Second time priming with honey which is much less prominent just a little presence right at the end of the bitterness. Very promising for a youngun.
