Here's that ginger beer I did with 3kg of honey and I think it was 1kg cane sugar.
This is pretty good!
7% abv she came in at so for me a heavy hitter. Fermented with lellamands Windsor ale yeast attenuated to 1.000 but you can taste the honey!
It's got a honey sweetness thing to it that and or it's the alcohol playing on my taster...
On the nose you can smell that kafir lime and the ginger.
It also reminds me if a mead with all the honey in it, it makes sense.
It's got some great ginger flavour and bite to it but for me personally at this ABV I'm thinking oh man it'd be great if it had that green ginger wine kick to it which it doesn't.
That would require more ginger if you want to brew it.
I threw 200g ish in the boil and 100g juiced along with 1 kafir lime and the zest in secondary fermentation (keg).
I think it could do with one more lime.
But I'll be brewing more of this bad boy for sure
