Yeah I have 4 kegs now....I also hate the thought of bottling unless is something like a Christmas ale or @AHarper ’s piss :)

as for me today just watching temp and gravity. Pitched yeast last night before bed. It sat at 63-64 all day is 67 now and churning down 15 points. I’ll probably put a corny lid and spunding valve on it tomorrow or Sunday depending where gravity is.
 
Well bottling tomorrow - and a mini keg I think - with the Piwo Grodziskie finally brewed. A polish friend of mine had not tasted it before and neither had I. Will look forward to it in a couple of weeks time when it has carbed enough. This time I will not overdo the sugar.

Your CURRENT plan, next you'll be wondering "what if I..." and it'll be a conical, or a tilt, or a plaato, or a ferm chamber, or a brite tank, or....it's a problem really.

Could be worse, I have the same problem with DJ/Karaoke gear for my side gig. JUST ordered a new mixer!

Yea true, that's why I'm trying to buy bigger than what I currently need. "Future-proof" my equipment, as they say

To future-proof, buy smaller. I know it sounds strange but as you brew more and your stock starts to build up, I find that most brewers end up looking to downsize. If you're going pro, that doesn't apply... Last night I kicked a gallon keg of English Brown, first beer im a long time I thought dang, I wish there was another pint in therr...

Yes. My sweet spot is three gallons and I don’t see myself moving to larger volumes or kegging. Bottles allow me great flexibility. I like variety and my current inventory contains 10 batches of 6 different styles. I also like to hydrate the neighbors from time to time and they appreciate the selection.
 
Brewed a batch of " Blue Moon Clone" today. The recipe called for 1.5 teaspoons of Coriander at 10 min boil time. OOps , I forgot to add the Coriander. sooo... popped off the air lock and just dumped it in. I'll see how that works out for me.
 
I bottled an 80 Shilling based on Alan's 80 shilling recipe. Sample tasted pretty good. A little sweet but, that's to be expected for an uncarbonated Scottish ale. By the time of the monthly Brewer's Friend meeting it should taste great. The only problem was that it's rather cloudy because I could not find my Whirlfloc tablets on brew day. I know I have them somewhere :mad: darn it!

I am honoured. I hope it turns out well. Don't worry about it clearing - just close your eyes when you drink it... a prayer may help also.

I crafted a recipe to use a tiny little bit of the half kilo of Azacca hops received as a reward for early renewal of my AHA membership, and posted my recipe in associated recipe thread.
