Yeah I have 4 kegs now....I also hate the thought of bottling unless is something like a Christmas ale or @AHarper ’s pissJust ask @Josh Hughes how slippery that slope gets. But you'll learn to loathe bottling eventually.

To future-proof, buy smaller. I know it sounds strange but as you brew more and your stock starts to build up, I find that most brewers end up looking to downsize. If you're going pro, that doesn't apply... Yes. My sweet spot is three gallons and I don’t see myself moving to larger volumes or kegging. Bottles allow me great flexibility. I like variety and my current inventory contains 10 batches of 6 different styles. I also like to hydrate the neighbors from time to time and they appreciate the selection.So I should be good staying at 2.5 gallons and bottling, right?
I am honoured. I hope it turns out well. Don't worry about it clearing - just close your eyes when you drink it... a prayer may help also.I bottled an 80 Shilling based on Alan's 80 shilling recipe. Sample tasted pretty good. A little sweet but, that's to be expected for an uncarbonated Scottish ale. By the time of the monthly Brewer's Friend meeting it should taste great. The only problem was that it's rather cloudy because I could not find my Whirlfloc tablets on brew day. I know I have them somewhere darn it!
