What is a Texican lager yeast? 34/70 LOL.
 
Then, it would have to be a new and improved, White Labs Texican Lager Yeast:)
 
Yeah, exactly; WLP940. Trying for about 4.75%ABV or thereabouts. Nothing too heavy, it’s hot as you-know-what here in the next couple months so something the neighbors can drink that is still generally likable.

I’m hopeful. I did a dunkel and schwarzbier back to back and both came out pretty good, both about 4.8%. Fingers x’d.
 
Brewed a pale ale with 100% Vienna malt, Nelson sauvin and Ella hops in the whirlpool for about 40 IBUs a la wayners pale ale. Transfered onto the S04 yeast cake from my Irish stout. Added the Ella and McKenzie dry hops when racking onto the yeast and fermenting under 12 psi pressure. A set and forget pale ale. It's already cranking away a few hours later
 
I've cleaned my fermentation fridge.

Now I am thinking of ways to brew that don't require lifting.
Current idea is leaving the kettle on the stove top (wrapped up) during mash.
Boil, then no chill. (But that means I only have 1 burner for dinner etc)
Siphon to fermenter.
So far so good...
Now all I gotta do is teach my fermenter to walk to my fridge

Otherwise thinking of what yeast to use.
Kveik Voss and using heating mat in the fridge is probably the most sensible.
Although no chill might just get me into saison temperatures.

I'll get there in the end ;)

Those Rauch beers take a good bit of balance for me to like them. I love a little smoke, but too much gets overpowering. It hope it comes out well.
 
Wort is going for overnight chill.

Slight panic now...
Fermentation fridge is giving issues. Trying to solve them, but not looking good.
2 plans B - stick with saison or change to kveik and fermenter goes into the duvet lined cooler box
Belle Saison should be able to handle quite high temperatures. Kveik Voss definitely can.

Yep, unfortunately the fridge has died.
Not sure if it is permanently or temporary, but this batch will have to go without temp control.
Now I need to choose between the 2 yeasts

Uh boy, are those your expected high and low temperatures for each day? Like today looks like a low of 20 and a high of 33. Pretty wild swings for our precious little friends to work in...

Yeah, but it will level out because the fermenter will be wrapped in a duvet and in a cooler box.
