Semi recipe - hop & yeast question

I chanced it and went for Belle Saison.
Voss would have been the sure choice, but I had my mind set on Saison.
Pitched early this morning (expired yeast :) ). If no sign of fermentation by tomorrow afternoon (30+ hours after pitch) I may add Voss anyway
 
See if you can keep that thing somewhat cool for a couple of days. Water bath, anything. Once most of the fermentation is done after a couple of days, let it get hot.

That is the fun of brewing. I learned something because I had to go cool with my last lager. It worked out well. Hopefully, it will be a learning experience for you, and it will also work. That yeast will probably eat everything anyway LOL.
I'm hoping the rain holds off just long enough for me on Sunday. Otherwise, it is going to be interesting during the whirlpool.
 
I've been brewing a lot without temp control and those yeasties can handle quite a lot.
It seems to me like it is fluctuations they struggle with, more than actual temperature.

Just one failure because of temperature...
That was M47 and an unexpected hot spell, if I remember correct.
The beer batch became drinkable after time, the simple cider was a disaster
I tried to make it into vinegar and even that was disgusting
