I'll be brewing this in the fall, had to change the recipe a little because of stock ingredients, should taste the same
I'm cooking it as written.Sweet well looks like this is starting to take some traction.
Maybe we could cook this stout up with different yeast strains and share the outcomes?
So I'll use dry English Ale wlp007.
Would using something far left like 34/70 be too crazy or do youse recon stick to just ale strains?

Ah, water! Just use the London profile, keep the mash pH to around 5.4.They're in the recipe. Unless you mean something other than the stats.
I agree my response to the op' s recipie was a fruit based saison style as I know if you push certain saison yeast strains I've herd not personally expirienced the bubblegum flavours from them.I'm a bit surprised/disappointed that the OPs original idea didn't get more attention. To see/read you guys brainstorm a new/unique recipe would have been fun. Maybe a different style than suggested though, if that was caused the lack of positive responses.

It was a bit of a difficult starting point, quite extreme to most of us. That's why I proposed something you could do straight, tart up any way you'd like (or down, if that's your thing). I guess we took it as an invitation to come up with a BF community recipe, not to modify a juicy fruit NEIPA.
