Notes
Heat 4gal Water to 173F before adding to mash, then prepare another 2.5gal
Let mash sit for 40minutes minutes with 4gal.
After ~40 minutes, pull just over 1 gallon of thick mash for decoction
Boil decoction for 25 minutes, stirring frequently, and add back to main mash to reach 173F
Hold ~20 minutes at 173F and begin slow sparge until 6.5 gallons is reached
Boil for 90 minutes, adding hops as per above.
Cool brew to under 65°F
Don't forget to take OG. (1.061)
Add brew to 6 gallon PET carboy and pitch yeast.
