Notes
pitch yeast at 46-48F and hold temp for 4 to 5 days. Slowly let temp rise to 55F over the next 5 days. Raise temp to 68-70F for 5 to 7 days for diacetyl reduction. When fermentation finishes, drop temp to 32F and hold for a week before kegging.
