May 26 - brew day

mash at 152° F for 60 minutes
vorlauf, drain 2 gallons to kettle (O.G. 1.067)
add 4 gallons sparge water at 175° F, stir, rest
vorlauf, collect to scant 5 gallons
add 2 gallons sparge water, stir, rest
collect to 7 gallons, pre-boil O.G. 1.037
boil one hour, chill to 74° F, pitch

efficiency is at 77 or 78 %, pretty good for my rig

the Scottish yeast starter never took off, so I added a packet of S-04 the morning of brew day. thus, the name change from Scottish Table Beer to Scottish (not) Table Beer

May 31 - racking day

June 8 - bottling day
Prime with 5.5 oz. corn sugar boiled in 2 cups water
