Notes

Boiled on 3/18. Froze a pot full of distilled water outside. Boiled for longer than normal as the lighter malts have more dimethyl sulfide than others, which leads to something called SMM later in the process. A cold crash is also supposed to reduce this unwanted byproduct. Did best but showing over 75F when put into primary (based on reading from the chiller rod).

Pitched yeast following day, 52F in blanket.

Raised temp to 59F on 3/25. To 65F on 3/26. Racked to secondary with no chilling, on 3/29.

This turned out quite quaffable come warmer weather, with light malty notes and good balance.
