Notes

Used carbon-filtered St. Louis Tap water. Treated with 0.3g ascorbate per 5 gallons to remove chloramine.

First version of this beer did not use Summit, and it was very good, but needed a bit more punch. Smooth bitterness, floral, very dry, despite the caramel grains.

Bottle conditioned with 1 cup DME gave it a fantastic head and smooth drinkability.
