Start with Chicago tap water.
Mash: Add 1/4 tsp gypsum, 1/4 tsp CaCl and 1 tsp lactic acid. Strike water temp of 155*F for a mash temp of 148*F.
Sparge: Add 1/8 tsp gypsum, 1/8 tsp CaCl and 3/8 tsp lactic acid. Water temp of 177*F for a sparge at 168*F. |

I got 1.75 ounces of dried sterling hops off my second year plant. These were used in the 10 minute and 5 minute additions to this beer.
