Best to grind the Roasted Barley separately and cap the mash during dextrine rest or in the last 15-20 minutes of main rest if using single infusion. Finely ground in a coffee grinder and minimum time in the masy works very well to extract rich color and deep roast flavor without strong tanins.
S-04 has been the yeast so far but I plan to try WLP-004 Irish Ale yeast in future. |
