Try this using Termamylase and possibly raise the temp.. last time it was very weak conversion and needed a reverse.
Also - NEVER USE FLOUR UNLESS YOU REALLY LIKE STUCK SPARGES!!!! 1/2 lb of buckwheat flour killed me extremely.

Cereal Mash the buckwheat (grits in the above recipe).

Being honest, the single infusion has always sucked for me - I may make another go at it with Termamylase and higher temps.. but in general I usually end up gelatinzing starches.. The Reverse Step mash and/or Lavery Method (with fresh millet) seems to always work the best, even though it's like a 12 hour brew day.
