I have not brewed this clone recipe but have some questions about how it compares with the original because it is the most popular on this site. Is there a version of Old Speckled Hen being sold that is 6% ABV? It’s always been 5% when I’ve seen exported in bottles. How does an Irish yeast compare with an English yeast here? I’ve never used Irish yeast but have spent time in Oxfordshire so I am somewhat familiar with the flavors of their regional ales. Lastly, is an SRM of 10 appropriate here? My glasses of the original have been darker, at an SRM of 15 or even higher as I compare it with the chart. Just working on adjustments for my own recipes as I sample an Old Speckled Hen. Thanks!
