INSTRUCTIONS (Single Infusion):

  • Prepare yeast starter at least 24 hours in advance.
  • Mash grain at 155º for 60 minutes.
  • Raise temperature to 168º.
  • Sparge for 15 - 20 minutes @ 175º.
  • Add extract and bring to boil.
  • Add other ingredients according to schedule.
  • Primary fermentation 7 days @ 70º - 74º.
  • Secondary fermentation 10 days @ 70º - 74º.
  • Tertiary fermentation 7 days @ 70º - 74º.
  • Carbonate.
  • Age 8 weeks @ 60º - 65º.
