Notes

Floating thermometer broke in boil pot, 2 minutes before I was about to get to boiling. I didn't bump it or anything, it just broke on its own. Some glass and small number of iron balls got into pot. Going to proceed anyway because the iron balls (tested with a magnet, they stick to it) should be harmless, and the glass should all settle out. Thermometer part did not break, and modern thermometers don't have mercury anyway, so that's not an issue.
