Why is it that when I brew a bitter to use up old hops and specialty malts do they usually positively surprise me?

Uncomplicated, hop forward, and smashable... what more could I want.

It didn't rate it excellent because it wasn't special. Solid, happy if I got served it at a pub, just not life changing.
