Hochkurz-type step mash - start low for beta rest, direct fire temp raise to alpha rest (could also do a single decoction here), then drain BIAB and dunk sparge in new pot. Combine second (sparge) runnings back into first pot and bring to a boil. Lose about 0.35 Gal to grain absorption.
