  • 154F 70 minute mash. pH est. = 5.43. ph act. = 5.34. Good.
  • OG (without honey) = 5.73 gal @ 1.044 (74% eff).

    06Jun2024 Honey addition
  • Fermentation slowing down. Krausen already falling.
  • Adding honey to primary. Increasing amount to 0.55kg (from 10% to 11.5% of fermentables).
  • Active again within 1 hour. Visual check at 2 hours shows a 3" thick krausen.
  • Estimating starting gravity would be 1.052

    27Jun2024 Kegging:
  • FG = 1.006. Again, overattenuation with this strain. ~6.2% ABV (88% attn).
  • Very clear. Tastes smooth and balanced. Has body. Noticeable honey. Quite nice, and seems promising.
