- boil 1000g young spruce tips for 20 minutes in extra kettle to make 4-5 litres of spruce tea and steep with tips for 24 hours
- add strained spruce tea at the end of hop boil 10 minutes before flame out
- add 25g lemon peel to combine with spruce flavor
