I'm using "Minute" rice because I'm lazy (don't want to do a cereal mash with regular rice, or drive to home-brew store to get flaked rice - but could use either of those as well)... Went with the Jasmine version. This beer is probably a bit more hop forward, with the late additions, than a standard Japanese Rice Lager - but similar bitterness.
Do a full volume boil if you can, but I'm doing a partial for my system limitations: 3 Gal water in mash, lose only about 0.2 gal to grain/rice absorption (BIAB), so 2.8 gal first "runnings". Dunk sparge in 1.3 gal to get second runnings in smaller pot, then combine with first runnings back into bigger pot for 4.1 gal pre-boil. Boil-off is about 0.6 gal/hr, and hops absorption is about 0.05 gal, so end up with 3.45 gal. Add 1.05 gal RO water to get about 4.5 gal into fermentor (5 gal carboy). After about 1 qt loss to trub, should have about 4.25 gal finished beer.
Normal lager fermentation (do a D-rest around 65º), then lager for 4-6 weeks.
