Upscaling from a two vessel mash to get appropriate fermentation volume.
Split grains in half.
Heat 10 gallons of water in big kettle and 5 gallons in small kettle.
5gal:
1.33g calcium
5g gypsum
.33g salt
10gal:
2.66g calcium
10g gypsu,
.66g salt
Mash in 7.5 gallons in original mash tun
Pour 5 gallons of small kettle into remaining 2.5 gallons in big kettle.
Mash in remaining grain in big kettle.
After mash is done, collect from mash tun into small kettle.
Collect from big kettle into small cooler.
Remove grain from big kettle and pour both small kettle and small cooler into big kettle.
Boil and continue as needed. Lauter through cooler tun for any extra preboil volume.
Properly measure volume added to fermenter and add treated water as needed for 11-12g.
.266 calcium per gallon
1g gypsum per gallon
.07g salt per gallon
Ferment at 60-65.
