Notes
Cinderella, sugar pie, or canned pumpkin -
If whole pumpkin, chop in large chunks, roast 345 degrees for 45 min. on parchment lined baking sheet. Remove skins and mix in blender until smooth.
Steep grain in 1 gallon water at 152 for 30 min then raise to 168. Rinse and remove.
Add 5 gallons water, add pumpkin, bring to boil. Turn off heat and add LME. Boil 60 minutes, add hops and allspice per schedule. (use whole allspice. Toast in dry pan during boil. Coursely crack and add to hop spider.)
Ferment 10-14 days. Add vanilla bean and additional allspice, if needed. Remove spices, crash and package.
