Notes
Bring 8.5 gallons of water to 158F mash temp. Mash for 90 minutes at 151F. Drain & batch sparge with 2 gallons of room temperature water for 10 minutes.
The boil volume should be 8 gallons. Boil for 120 minutes to bring the water volume down to 6 gallons. Follow the hop schedule.
Ferment for 3-4 weeks. Bottle condition at room temperature for an additional 4 weeks. Chill and serve.
