This is one of the best stouts I've brewed. It's a smooth, rich stout that doesn't sit with a lot roasted and ash flavors. My wife's description is, it's like Guinness, but smother and richer. I'm going to use this recipe as a base for my stouts going forwards.

Part of the richness comes from the pale chocolate malt as well that adds a nice subtle chocolate note. the crystal malts add a subtle sweet and dark fruit note as well. If the peat malt is too much, possibly try melanoidin or aromatic malt. The chocolate wheat malt along with the roasted barley give a nice roasted note without stealing the show. the wheat lets the lacy tan head stay longer than it should and give a beautiful presentation. The head itself is also a little thick and enjoyable on its own. I can't taste any lemon or floral notes from the Liberty. The bitterness is right on point balance the sweetness, but let the malt notes shine.

I can't put my finger on what note stands out the most as it all melds together amongst the chocolate wheat. Give this beer a try and let me know if you have any ideas to improve it.
