Notes
Mash/steep grains in 3 gals distilled water with 3g gypsum for 60 mins at 152F (156F strike water). Mashout at 168F. Sparge/rinse with 0.5 gal spring water at 170F. Strain grain bag, and top-off with 1.5 gals boiling water to achieve 4.5 gals starting volume
75 min boil.
Add DME in thirds (1.25 lbs at 15 mins, 37 mins, 60 mins into boil)
Add hops/extras per schedule.
Chill to 70F using wort chiller (leave hop bags in), and auto-siphon into 5 gal carboy after first adding yeast starter via funnel.
Top-off to ~4.5 gals per dilution calculator to achieve target OG.
Ferment at 68F. After ~ 5 days, if near FG, add dry hops (leave these hops for 7 days).
