Philly sour likes good pitch rates and low mash temps for short chain sugars - glucose from dextrose can increase acidity
So I'm going for a mash temp of 65C
36l at 75C to give 73C in tun for 65C
Philly sour likes higher temps for fermentation 22-30C. Will target 22C
33.5l in the kettle at 1.049
26l at 1.057 in the fermenter so added water to 34l at 1.043 60% efficiency
Pitched at 20C target 22C
