think this is too little for American market. less sensitive to hops presence due to Philly Sour being hop friendly. Boil for 90 for pils malt DMS reduction. Belle Saison is being copitched to produce a more farmhouse flavour and diastaticus action, as well as allow β-glucosidase enzyme to transform high survivable levels from centennial mash hops to have a high monoterpene alcohol production (gerianol, linalool) with the end effect of highlighting a floral light citrus tone. End result should be a low alcohol slightly soured dry ale that is a base for adding fruits and spices to taste. 10g CaCl2, 5g CaSO4, 24g Lactic 88%.
