Mashed at 153 as wanted slightly higher attenuation. Sparged with 1 gallon of 168 water.
Pre boil gravity was 1060. Post boil 1066. Chilled to 65 degrees with new Jaded. Pitched 2 packs of dry yeast straight onto wort.
12 hours later fermentation was active and gravity was 1058. Kept chilled at 65. After 48 hours gravity was 1016. After 72 hours gravity was 1009. Added 3 oz of hops in a bag.
After 5 days of dry hop put into keg - 8 days total fermentation. FG 1011 with hydrometer.
Drank after 10 days on CO2 In kegerator. Thick creamy head that lasts a while. Hazy golden orange color. Citrus nose. Palate is yuzu, notes of guava, and a firm underlying bitterness.
