- add "late addition" fermentables into 3rd infusion step (73°C)
- 50ml vanilla extract = equivalent of 5 vanilla beans
- "sacher" variant: instead od maple+vanilla+coffee (per 10L of beer) add 2kg apricot pyré, 20ml vanilla extract and 100g cocoa nibs (macerated in whisky for >7 days)
- consider adding barrique chips into secondary fermentor
