Notes

14 lbs of Apple Juice in the recipe gets to the actual OG (since no way to add volume of juices) - actual recipe is 1.5 gallons Apple Juice and 0.5 gallon Cranberry juice. Add pectic enzyme (for clarity) and wine tannin (for structure/mouthfeel/bitterness, since only using store-bought sweet apple juice. Can also add Acid blend as needed to taste) while pouring juices into fermentor to mix (shake to mix and aerate, as well). Use kveik and ferment at room temp (or hotter if you like!). After fermentation, back-sweeten after stabilizing (with K sorbate and Campden tablets) with 1.5 cans apple juice concentrate.
