Rebrewing this, just to confirm that the reduction of bittering and going to a gentler bittering...I am setting the Chocolate at 4 oz and adding 2 oz of midnight wheat for color and mouthfeel. Changing the hops to Columbus / Williamette. Edging ever closer to lovely Drafty Kilt.

I used Honey Malt this time, I may add some Melanoiden next time to crank the maltiness up more...tends to add benefits similar to decoction mashing.
