This is not exactly a Saison and this is quite complex beer, but makes a nice dry summer sipper if done correctly. Very citrusy, dry and deadly!
Peel lemon(s) and remove/scrape all the pith before u add them in. Squeeze and add the juice also.
Yeast pitch:
Start fermentation with Verdant IPA yeast. Once gravity is under 1.025 (usually within 36-48hours) pitch Belle Saison yeast to support and take care of the drying part.
Dry hop:
Add dry hop when fermentation is complete or near completion
