Think I will add a small amount of smoked malt next time along with a teaspoon of medium toasted oak chips to the beer at pitching time. Plus fuggles at whirlpool.

Also mash nat a higher temp, around 70C - up the bitterness to compensate

Maris Otter cannot be substituted. Bairds medium crystal can be substituted with another brand but must be English. Gladiator malt is a high-dextrin malt and is added for body and head retention, but any brand will do however, it is an important addition. Bairds chocolate malt is not easily substituted, it is a very chocolatey malt, and adds great depth to the flavour. Flaked barley is added for body, do not use oats, they are too oily and will kill the beer foam (head). Victory malt is an intense malt, but Melanoidin malt is similar and can be substituted, otherwise use biscuit malt if pushed.
