Lagering

Ferment @ 50 F until foam subsides and is mostly clear on the surface. Then let it warm up to 60 F for 2 days. Drop the temperature back 3 to 4 degrees F per day until you get down to 38 F. Leave it there until the beer clears and then rack to seconday and lager at 33 to 35 F for at least 4 weeks. Then keg

Packaged

Kegged and shook 14 lbs. CO2 in keg for 10 minutes, then placed in fridge with 15 lbs CO2 at 33 F. Hold at 33 for continued lagering. Turn down CO2 after two days.
